Ingredients: Brinji Rice Recipe

For Masala Paste:

  • Handful of coriander
  • Handful of mint/pudina
  • 2 pods of cardamom
  • 4 cloves
  • ½ inch cinnamon
  • 1 tsp fennel/saunf
  • 2 tbsp water

Other Ingredients:

  • 2 tbsp ghee/clarified butter
  • 1 tbsp oil
  • 4 bay leaves/tej patta/brinji ilai
  • 1 star anise
  • 2 pods of cardamom
  • 1 onion, sliced
  • 1 tsp ginger garlic paste
  • 3 green chilies, slit
  • 1 tomato, chopped
  • ½ carrot, chopped
  • 2 tbsp peas/matar
  • ½ potato/aloo, cubed
  • 7 florets of cauliflower/gobi
  • 5 beans, chopped
  • 1 tsp salt
  • A few curry leaves
  • 1 cup water
  • 1 cup coconut milk
  • 1 cup basmati rice, soaked for 20 minutes
  • 2 tbsp chopped coriander
  • 2 tbsp chopped mint/pudina

Instructions: Brinji Rice Recipe

  • Firstly, prepare the masala paste by blending a handful of coriander, a handful of mint, 2 pods of cardamom, 4 cloves, ½ inch cinnamon, and 1 tsp fennel with 2 tbsp water until smooth.
  • Heat 2 tbsp ghee and 1 tbsp oil in a pressure cooker. Add 4 bay leaves, 1 star anise, and 2 pods of cardamom. Sauté until aromatic.
  • Add 1 sliced onion, 1 tsp ginger garlic paste, and 3 slit green chilies. Sauté well.
  • Next, add 1 chopped tomato and sauté until the tomato turns soft and mushy.
  • Now add ½ chopped carrot, 2 tbsp peas, ½ cubed potato, 7 florets of cauliflower, 5 chopped beans, and 1 tsp salt. Sauté for a minute until the vegetables turn aromatic.
  • Additionally, add the prepared masala paste and a few curry leaves. Continue to sauté for a minute until the raw flavor disappears.
  • Pour in 1 cup water and 1 cup coconut milk. Mix well and bring to a rolling boil.
  • Further, add 1 cup of soaked basmati rice and give it a good stir.
  • Sprinkle 2 tbsp chopped coriander and 2 tbsp chopped mint.
  • Cover the pressure cooker and cook for 2 whistles on medium flame.
  • Finally, allow it to cool slightly and enjoy the brinji rice with raita.
