Ingredients (240 ml cup used)

  • 1 cup chopped yam pieces (elephant yam, suran, kanda gadda)
  • 1 green chili slit
  • ½ tsp. ginger garlic paste or ¼ tsp. ginger paste
  • ½ tsp. garam masala or meat masala or biryani masala
  • ¼ tsp. red chili powder or pepper powder
  • 2 sprigs fresh curry leaves
  • ¼ tsp mustard (rai)
  • ½ tsp cumin (jeera)
  • Pinch turmeric (or haldi)
  • Pinch hing (asafoetida)
  • 1 to 1 ½ tbsp. ghee or oil

How to cook yam or suran

  1. Soak yam in water for about 15 minutes for the mud to melt off. wash thoroughly.
  2. Boil peeled and chopped yam until tender in lot of water and drain them or cook the whole yam in pressure cooker with little water for 3 to 4 whistles. once cool peel off the skin and chop to pieces

How to make yam fry or suran fry

  1. Heat a pan with ghee, add curry leaves, green chili and fry till crisp, set this aside
  2. Add cumin and mustard, when they splutter add hing
  3. Add cooked yam pieces, salt and turmeric
  4. Fry on high for 4 to 5 mins, keep stirring to prevent burning. If needed add little more ghee
  5. Add pepper powder or red chili powder, garam masala and fry for a min or 2.
  6. Serve yam fry with rice.
